New Recipe – Pineapple in Foil

Labor Day is coming, and so is the end of summer. So the recipe for the week fits into the Labor day grilling. I love pineapple and grilling it in foil sounds so yummy!! New Finds – August 24,2009

I am always looking for healthy food to feed Little J. Especially on the go. So when I saw the ReBar and read the ingredients, I thought why not try this bar? The original ReBar is just packed with fruits and vegetables. I was a little skeptical as to whether Little J would like it or not. But after the first bite, I knew he was into it.  And listen to what’s in the ReBar: Apple, Carrot, Spinach, Alfalfa, Cabbage, Broccoli, Kale, Celery, Rosehip, Parsley, Cauliflower, Cucumber, Beets, Bell Pepper, Collards, Watercress, BokChoy, Tomato, and Garlic.  I can’t believe Little J would eat anything with even a little of some of those veggies in it!! So shhhh! Don’t tell the kiddos. Just let them try it and see if they like it too!

Potty Time!

Little J has FINALLY started going pee in his potty! Yea!! Because he has been doing so well, my husband and I wanted to take him for a treat. So we went to In-n-Out last night and ordered him a burger (plain with ketchup) and an order of fries (which I shared with him. Being the food allergic two-year old that he is, Little J has been a little picky about food lately. I was honestly expecting him to take the meat out of the burger and leave the bun.

He took his first bite…..and then he scarfed the burger. Every crumb! Then he went in for the fries! Little J likes food. He loves veggies and fruit. But this was astounding! I have never seen him go at anything the way he went at this burger!( I swear they are not paying me)

Anyway, In-n-Out is  peanut free and the only eggs and dairy are in their cheese, special sauce, and milkshakes. So check it out!

Q: What is this SPEWD Butter you refer to in your recipes and where do I get it. I’ve been looking for a product like this forever.

A: This is the question I get asked most frequently. I make SPEWD Free Margarine at home and you can find the recipe on the SPEWD Free.com recipes page. I will also post it here today! Ingredients 2 Cups Soy Free Shortening
1 1/2 Teaspoons Salt
1 Teaspoon Artificial Butter Flavoring
2/3 Cup Rice Milk
2 Teaspoons Xanthan Gum
Directions Heat Shortening In Microwave Until Melted (about 1 Minute, 30 Seconds). Place Melted Shortening In A Bowl With The Salt And Xanthan Gum. With Whisk Attachment On Electric Mixer, Whisk At About 2.5 (medium-low) Until Combined. Heat Rice Milk In The Microwave For 30-60 Seconds Or Until Warm. Add Milk And Butter Flavoring To The Shortening Mixture. Whisk With Electric Mixer On 4 (medium Or Medium High) Until The Mixture Is Thoroughly Combined And Becomes Fluffy, About Two Minutes. Pour Into Airtight Container And Place In The Refrigerator To Harden. When Hardened, The Margarine Should Be A Soft, Spreadable Consistency.

New Recipe – Stir Fry Sauce

Last night I made an Asian Stir Fry sauce that was easy and yummy! You can make it with soy sauce or use my No Soy Sauce recipe to replace the soy sauce. New Finds – Part Seven

Please forgive me for disappearing for a week.  I got a last minute opportunity to go spend a week on the beautiful Big Island of Hawaii (Thank you again to my in-laws!!). So we all packed up and went. All I can say is, I LOVE Hawaii.

Ok, so now for the new find! Like I said, the trip was last minute and I knew I was going to need breakfast and snacks for Little J. So I started scouring the health food market. One of the things I came across was Phil’s Power Pancakes. The store I went to was almost out of them, so I bought two different flavors: Chocolate Chip Hempseed and Cranberry.  These “pancakes” ( I think they are a cross between a cookie and pancake) are free of wheat, dairy, eggs, peanuts. They are all natural and healthy and yummy! Little J really loved it! They are kept refrigerated, and Little J ate his straight out of the package, but I have heard that Phil’s Power Pancakes are especially yummy grilled and topped with syrup. We will try that next! Q: Many of your recipes call for “Oat flour, Tapioca flour, Rice flour….”
Can those same recipes use just plain white flour?

A: Of course! I try to come up with recipes that are very allergy friendly. But if you can have wheat, by all means use wheat flour!

New Finds – Part Six

Ok, so we haven’t tried these because Little J is allergic to eggs, but they look great!  Ian’s Natural Wafflewiches! They are gluten and nut free. They come in two varieties: Egg and Maple Cheddar and Maple Sausage and Egg. Both are egg sandwiches on waffles. Sounds yummy! Let me know if you have tried them and what you thought!
